I’m always on the hunt for delicious, easy and healthy snacks and these no-bake vegan snack balls ticked all my boxes.
I’ve been packing my portion controlled breakfast and lunches for work, complete with healthy snacks, but I was struggling with one issue…my nagging chocolate cravings (I have a sweet tooth that is insatiable!).
Luckily, one of my favourite fitness YouTubers, Melissa Bender posted this recipe for her delicious no-bake vegan snack bitse on her blog site and it was the answer to my prayers – thank you Melissa!
This no-bake vegan snack recipe is super easy and requires a few simple ingredients, as follows:
- 1.5 cups nut of your choice (I use walnuts, Melissa uses pecans!)
- 1 teaspoon vanilla extract
- 12-14 medjool dates (about 1 cup) – pits removed
- 1 tablespoon water
- 1/4 cup natural cocoa powder (optional)
Easy directions:
1) Finely grind the nuts in a food processor.
2) Add all other ingredients (excluding cocoa) into the food processor and mix until it makes a sticky, doughy texture.
3) Roll mixture into balls.
4) Optional: Roll in cocoa (I find this step keeps them from being sticky).
5) Store in fridge or freezer. They are ready to serve!
I like to make a batch of these raw vegan snack balls at the beginning of the week and add one or two into my lunch. The dates provide a natural sweetness and are great for digestion, whiles the nuts are a great source of healthy fat that keep me full and content and away from chocolate.
Just don’t eat too many at once, since the dates still have sugar and nuts are high calorie (one or two at once are fine!).
